Ingredients
- 2 eggs
- 150ml milk (oat milk)
- 1-2 teaspoons matcha
- 1 tablespoon sugar (or to taste)
- Bread of your choice
- Coconut yoghurt, to serve
Method
Crack the eggs into a bowl and whisk them. Add the milk and sugar and mix well.
In a separate small bowl, whisk the matcha with a little warm water until smooth and lump-free. Add the mixed matcha to the egg mixture and stir until everything is well combined.
Dip the slices of bread into the matcha egg mixture until they are well coated.
Cook in a pan with a little oil or butter until golden brown on both sides.
Serve warm and garnish with a spoonful of coconut yoghurt.
Optional: add fruit or a drizzle of honey for extra flavour 🍓🍯
